Heirloom Tomato Salad

This heirloom tomato salad is so simple and delicious. 


Step 1: Pick a selection of tomatoes (the more colors the better) 

Step 2: Peel a red onion. Cut it into quarters. Pour 1/2 cup of balsamic vinegar into a small pan and place onion wedges in the pan. Cover pan and simmer until vinegar is completely reduced and onions are caramelized and beautiful. Place onions on plate and let them cool to room temperature.

Step 3: Cut tomatoes into wedges and sprinkle with salt

Step 4: Place wedges of onions with tomatoes

Step 5: Spoon bits of pesto and goat cheese on salad 

Step 6: Garnish with fresh herbs (I used Italian parsley leaves)

Step 7 : Sprinkle with fresh cracked pepper. Drizzle with olive oil and balsamic vinegar. 

Step 8: Enjoy!
