Day 43


Saute =  to cook quickly in a small amount of fat 

Grill = is done on an open grid over a heat source where temperature is regulated by moving the items to hotter or cooler place on the grill. 

Day 43 was spent learning how to properly grill and saute proteins. We produced a grilled pork chop with a gherkin demi-glace and veal escalope with a mushroom cream sauce. Both dishes were served with mashed potatoes and a vegetable; the veal was served with sauteed green beans and the pork was served with a tomato provencal.
