Day 95

Today we focused on dessert plating techniques and putting together some tiramisu with the ladyfingers that we made yesterday.  Tiramisu is an Italian cake made with ladyfingers that are dipped in coffee and rum and then placed between layers of a sweet mascarpone cream mixture. Tiramisu is one of my all-time favorite desserts - there is something about the moist texture and strong coffee flavor that makes for a perfect ending to any meal.  








For the dessert plating we used tart raspberry sauce, caramel, and dark chocolate to create a base for slices of chocolate hazelnut mousse cake.
