More noodles and dough but this time from the Americas. Our production list included: shredded chicken and cheese tamales, empanadas (stuffed bread), pupusas (Salvadoran stuffed masa flatbread) with curtidos (cabbage salad), chicken posole (Mexican chicken and hominy soup), and lengua (beef tongue) tacos.
My favorite item of the day was the chicken posole which I topped with shredded cheese, red onion, chopped tomato, shredded cabbage, watercress, corn tortilla chip, crispy chicken skin, avocado, and cilantro oil.
My commercial blender over-heated when I was pureeing hominy for the chicken posole and I was forced to use what I like to call the "trashcan" blender. On the base it says "Heavy Duty Blender" as if it was in any way unclear by the utter size of the thing.
