Fancy Rice Pudding

It really is about the simple pleasures in life and this recipe makes one of them.  Swapping golden raisins for traditional ones, adding some coconut milk, and chopped pistachios really takes this sweet treat to the next level. Super impressive with minimal effort... What's not to love?

Fancy Rice Pudding

Yield : 4 Servings

1 cup cooked long grain rice
1 cup whole milk
1/2 cup heavy cream
3/4 cup coconut milk
1/4 cup sugar
1/4 t cinnamon
1/3 cup golden raisins
1/2 cup pistachios, chopped 

1. Combine cooked rice and milk.  When it comes to a boil, reduce and simmer for 5 minutes while stirring constantly. 
2. Add cream, coconut milk., and sugar and whisk well until it begins to thicken again (about 5-10 minutes)
3. Remove from heat and add raisins. Chill completely. Top with chopped pistachios before serving.
