California Chop Salad

I'm crazy about chop salads. 

I love how each ingredient is bite-size and so each mouthful seems perfectly balanced with flavor and texture. This is my California Chop: Smoked Turkey, Crispy Maple Turkey Bacon, Candied Pecans, Dried Tart Cherries, Fresh Avocado, and Cherry Tomatoes over a bed of chopped Baby Romaine Hearts. The sweet notes of the salad pair beautifully with a super bright avocado vinaigrette.  It's like eating a bowl of summer and sunshine and happiness...a winning combo indeed.

California Chop 

Creamy Avocado Vinaigrette 

1/2 cup white balsamic vinegar
1 lemon, juiced 
1/2 avocado
1/2 t dijon
1/2 t honey 
1/2-3/4 cup grapeseed oil 
Optional Sprinkle of Fresh Herbs (basil, chervil, cilantro, chive)
salt and pepper, to taste 

1. Blend everything but the oil in a blender or food processor 
2. Slowly add oil until creamy and emulsified 
3. Season and Chill
4. Enjoy
