Last night we enjoyed a simple Sunday night dinner of dijon and garlic crusted lamb chops, wild rocket greens, and roasted cauliflower with golden raisins. The cauliflower was exceptionally delicious and bright so I thought I would share the recipe.
Roasted Cauliflower w/ Golden Raisins
1 head of cauliflower, cut into medium-sized florets
1 cup golden raisins
3 T olive or grapeseed oil
1/4 cup white balsamic vinegar
handful of italian parsley, chopped
Pinch of Curry Powder (optional)
1. Heat oven to 400 and line a sheet tray with parchment paper
2. Toss florets in oil and then lay out on tray and sprinkle with salt, pepper, and curry (optional). Roast in oven for 20 minutes or so.
3. Place raisins in a small saucepan with white balsamic vinegar and simmer until raisins have soaked up all of the vinegar. Turn off heat.
4. Serve roasted cauliflower topped with raisins and chopped parsley.
Note: If you are a vegetarian and plan on serving this dish as more of an entree you can add some fun extras like toasted nuts (almonds) or shaved cheese (grana padano). Yum.
