Day 112

We nixed our master course outline production schedule today in favor of a mystery basket pop quiz. 

Oh joy. 

We had a cart of ingredients to work with and each dish had to be appetizer size and include one root vegetable and one protein.  Ready. Set. Go. 

There's nothing like a little competition at 6 in the morning. 

Coffee in one hand. Knife in the other.

 Once the dish was created we had to make 12 exact duplicates while being timed and with the addition of "special orders" being called out (IE "one salad, no arugula"...."make that one a vegetarian"...etc)

The wonderful Cassie Bacon [bits] and I worked together as a team. 

Our creation? 

Grilled Squid, Rocket, and Black-Eyed Pea Salad over Raw Shaved Beets with a Meyer Lemon Vinaigrette, Fennel, Parsley Sprigs, and Toasted Pistachios.
