Day 118

Another pop quiz today in the form of yet another mystery basket. 

The assignment was to make a seasonal salad using only ingredients made available to us in the classroom. 

My creation:

Watercress, Arugula, and Celery Leaf Salad tossed in a Warm Pancetta Balsamic Dressing layered between slices of Roma Tomato with Sweet Walla Walla Onion, Bleu Cheese Crumbles, and Garlic Roasted Corn. 



We also learned about butter poaching using Beurre Monte (a water and butter emulsion). We poached white prawns and Filet Mignon for a little surf-n-turf dish. For added deliciousness we threw a poached egg into the mix too. The whole dish just simply melted when you bit into it. Yum.
