Banana Nutella Swirl Muffins

OK, I know I've been a little banana-crazy lately but I just couldn't resist posting one more banana-based recipe...it was that good. 

This recipe was adapted from Cooks Illustrated and includes an in indulgent swirl of Nutella which is what makes it so crazy awesome. You can add nuts if you like texture, I suggest toasted walnuts or hazelnuts. 

Banana Nutella Swirl Muffins 
Makes a dozen 


Ingredients 
2 cups  all purpose flour
3/4 cup bakers sugar
3/4 tsp baking soda
1/2 tsp table salt
4 super ripe bananas, mashed
1/3 cup plain greek yogurt
2 large eggs
6 Tbsp unsalted butter, melted
2 tsp vanilla extract
1/4 cup toasted nuts (optional),  chopped
Nutella (about a teaspoon per muffin)
Recommended: Baking/Cooking Spray (to coat your muffin pan)

Method
1. Heat oven to 350 degrees. 
2. Spray muffin pan with nonstick cooking/baking spray.
3. Combine flour, sugar, baking soda, and salt in a large bowl.
4. Next, mix mashed bananas, yogurt, eggs, butter, and vanilla in another bowl. 
5. Fold wet mixture into dry ingredients with until just combined (batter will be thick!)
6. Pour batter into muffin tin (don't be shy, fill each space up to the brim with batter or you won't get a big, beautiful, much-coveted muffin top!) and then top each muffin with 1 tsp of Nutella. 


7. Swirl with a skewer until marbled. 



8. Bake about 20 minutes or until a toothpick is inserted and comes out clean. 
9. Cool Slightly and Enjoy!!
