This is my take on a traditional Levantine bread salad except in my version the bread part is completely optional. What makes this salad so delicious is the mixture of crunchy raw vegetables tossed in bright vinaigrette sprinkled with creamy French feta and crunchy pita chips. You can make this salad with whatever farmer’s market vegetables you have on hand - I play with different combinations all the time - I encourage you to get creative! 


Farmer’s Market Fattoush 
Serves 4-6 as a side


Ingredients:
1 Bunch of Broccoli 
1 Head of Romanesco Broccoli
1 Bunch of Radish
3 Persian Cucumbers
1 Cup of Grape Tomatoes
2 Cups Sugar Snap Peas 
6 oz Sheep’s Milk Feta Cheese (I love Valbreso Brand)
1 Cup Pita Chips (optional)
Handful Fresh Parsley, Chopped 
Handful Fresh Mint, Chopped 
Cracked Pepper, to taste
Kosher Salt, to taste 
Red Wine Vinaigrette (recipe below)


Method: 
1. Chop all of your raw vegetables into bite-sized pieces.
2.  Add feta and pita chips. 
3. Toss everything in your vinaigrette with the fresh herbs 
4. Season with salt and pepper to taste. 

Red Wine Vinaigrette 

Ingredients:
1/8 cup Red Wine Vinegar 
1 Lemon, Juiced 
1 Tbsp Dijon Mustard 
1/2 Tbsp Fresh Oregon, Chopped 
1 shallot, minced 
1/2 cup Grapeseed Oil 
Kosher Salt
Cracked People

Method:
1. Whisk together lemon juice, vinegar, and mustard. 
2. Add Shallot and Oregano. 
3. Slowly whisk in Oil. 
4. Season with Salt & Pepper
