Super Bowl is just a few days away and our kitchen is working around the clock to get ready for a couple of Seattle and Denver themed parties (think Denver Green Chili and Beecher's Cheddar Mac & Cheese).  I've got an appetizer that is sure to impress any crowd and stand out from the rest of those standard party dips.  

The best part about this recipe is that it works perfectly regardless of which team you are betting on; Trout happens to be the state fish of Colorado but it also falls into the seafood category which makes it a Seattle-friendly dish too. It you are a neutral fan than you don't have to worry about either of these points but if you are headed out to a themed party - I've got you covered. 

Smoked Trout Dip 
Serves 6-8



Ingredients
12 oz Boneless Smoked Trout, flaked (I love the one from Russ & Daughters)
2 Cups Sour Cream 
8 oz Whipped Cream Cheese 
1/2 Bunch Scallions, Chopped 
2 Tbsp Fresh Dill, Chopped
1 Tbsp Fresh Parsley, Chopped
1 Tbsp Lemon Zest
1 tsp Fresh Lemon Juice
1 tsp Old Bay Seasoning
Dash of Tabasco
Kosher Salt, to taste
Cracked Pepper, to taste

Method
1. Place all ingredients in your food processor and pulse until well-combined. 
2. Check for seasoning - adjust with salt and pepper as needed
3. Serve with your favorite tortilla chips

Note: If you don't have a food processor, don't worry, you can mix this all by hand, it will be a little bit more rustic but still taste equally fantastic.
